We are proud to introduce our very own line of classic Japanese chef knives. The new Zen Series knives are made by us under our Ronin Blades custom knife division. Currently all our knives are made from high carbon O1 tool steel. Each blade is heat treated and tempered to a 60-61 Rockwell hardness. We patina/oxidize each blade in a black finish to reduce corrosion and food staining. All our knives have a traditional Japanese edge with a 16 degree flat grind. Handle materials are Dymondwood and are available in three color choices and either a Western or traditional Japanese style handle. Every knife comes with a custom fitted Kydex sheath.
